During the cheese manufacturing process, Monforqueijo learned to produce the regional cheese using the farmhouse method, and later designed a more automated production process which allows the history of the product to be reproduced, together with innovation and modernity. By carefully choosing the natural pastureland of the Alto Alentejo and together with its producers, Monforqueijo has guided the parturition of the flocks so that the sheep will produce milk all year round.
