Casa Agricola Roboredo Madeira (CARM) is a family business headed by Filipe Madeira, who takes his olive oil seriously. His dedication shows in the Grande Escolha (meaning the Great Selection). The organic olives – mainly Madural and Verdeal – are handpicked between the end of October and early December. They are processed without delay and pulverized in a traditional granite stone mill without the addition of water, which would diminish their aromatic quality.
